Chocolate Peppermint Candies (makes 3 dozen)

  • 3/4 cup sweetened condensed milk
  • 1 1/2 teaspoon peppermint extract
  • 4 - 4 1/2 cup icing sugar
  • 3 cups semisweet chocolate chips
  • 2 teaspoons hard block margarine

 

  1. In a bowl, combine milk and extract.
  2. Stir in 3 1/2 - 4 cups of sugar to form a stiff dough.
  3. Turn onto a surface sprinkled lightly with icing sugar.
  4. Knead in enough of remaining sugar to form a dough that is very stiff and no longer sticky.
  5. Shape into 1 inch balls, place them on a waxed paper lined (or grease proof paper) baking sheetand flatten into circles.
  6. Let dry 1 hour. Turn over and dry another hour.
  7. Melt chocolate and margarine.
  8. Dip patties in chocolate mixture and place on waxed paper to harden.
